It’s almost Fogust (foggy August) here in San Francisco which means that while most residents of the northern hemisphere are enjoying sunglasses and iced tea, San Franciscans are wrapped in blankets and drinking hot tea.
On that note, I wanted to share my favorite lentil soup recipe which requires few ingredients and little preparation time. It is the perfect treat for a cold and foggy afternoon!
Lentil Soup
Super simple and flavorful soup that makes even more delicious leftovers!
Cook Time 2 hours
Ingredients
- 1 cup lentils
- 4 cups water
- 2 onions chopped
- 1 tbsp olive oil
- 1 bay leaf
- 2 tsp salt
Instructions

Bring all ingredients, except salt, to a boil.

Reduce to low heat. Cover and let simmer for 2 hours.

Add salt 10 minutes before the end of the cook time.
